Grain-free Banana Bread

I love anything banana! Banana cookies, banana cakes, banana muffins, banana ice cream, banana pudding and most of all banana bread! I have discovered a recipe from Pinterest a looonggg time ago but I have made tweaks to it and kept the recipe because it is that good and healthy; which is a win-win! Here is my favorite grain-free banana bread recipe:

Ingredients:

  • 5 Ripe (very spotty) Bananas
  • 4 Eggs
  • 1 Tbsp. Cinnamon
  • 1 Tsp. Baking soda
  • 1 Tsp. Baking powder
  • 1/2 cup Coconut Flour
  • 1/3 cup Nut butter (I prefer almond butter)
  • Dash of pink salt
  • Optional: Nuts or Chocolate chips

Directions:

  1. Blend the bananas until smooth
  2. Add the wet ingredients: eggs and nut butter and blend
  3. In a separate bowl mix the rest of the ingredients
  4. Combine wet and dry ingredients and blend.
  5. Mix in nuts or/and chocolate chips
  6. Put everything in a coated pan (coat with coconut oil or just use parchment paper)
  7. Bake at 350 degrees for 40-45 mins or until toothpick comes out clean.
